250 g bacon, coarsely
1 x 410 g can of corn kernels
50 ml finely chopped parsley
50g cake flour
50 ml sour cream
5 eggs
3 ml chopped salt
5 ml baking powder

Method :

  1. Fry bacon until crisp.

  2. Add the remaining ingredients and mix thoroughly.

  3. Fill a greased jam tin three quarters full with mixture.

  4. Cover with a double layer of greased aluminium foil, then bake in the oven at 180°C for about 45 minutes or bake in the ashes of the fire.

  5. Turn out loaf onto a plate, slice thickly and serve immediately.
